How It All Started

Creating great gluten-free food is a passion for us. It started with Louise, whose interest began around twenty years ago when she was contacted by a close friend who had been diagnosed with Coeliac disease and so needed a gluten-free diet.

Louise’s belief that great food should be available to everyone stirred her interest. She used her chef’s knowledge of how a recipe works and the role gluten plays in food to work out how gluten can be replaced to create tasty meals for everyone to enjoy. 

The world of gluten-free food has come a long way in the last twenty years. There’s now a range of high quality gluten-free ingredients available in any good supermarket. There is also an increasing body of convenience products readily available, providing more choice for people buying or eating out gluten-free.

Working with Coeliac UK

In 2017, Louise was invited by Coeliac UK to become their resident gluten-free chef. In her words, “I met with the Coeliac UK team, and made a delicious gluten-free blueberry and almond tart. They very kindly said it was the best thing they’d ever eaten. Then they asked me to join the team!”

Louise works closely with Coeliac UK as a gluten-free chef and home economist, developing recipes to support its members. There are now over 1,000 recipes on the Coeliac UK website, many created by Louise.

If you only take one bit of advice when looking to go gluten-free, become a member of Coeliac UK. The dieticians are fantastic, and they will point you in the right direction, taking account of all your other circumstances, such as medical or personal choices like vegetarian, vegan, etc.”

Working With Education

In 2020, The Chef’s Forum invited Louise to be a guest lecturer on gluten-free cooking for students at the West London College. Louise’s first session was an online live session on cooking with different types of gluten-free flour, using an Indian dosa recipe as an example.

How to Make Gluten-Free Bread

Over to Louise; “Making good gluten-free bread is one of the most rewarding things to do – when it works! I’ve heard stories of frustration and disappointment. So, how do you make sure your bread will be great every time? I’ve been working on different gluten-free bread recipes for some time, and I believe we have now arrived at a range of bread and baked goods you can recreate in your own home.”
